This 6-Minute, High-Protein Strawberry Ice Cream Sandwich Haunts My Dreams

I will cut to the chase. It’s not actually ice cream, because of course you know it’s cottage cheese. But if you don’t know, blending cottage cheese and freezing it approximates the beautiful, unctuous, lusty feeling of ice cream on the tongue.

I’ve made all manner of things with blended cottage cheese, frozen and not, but when I saw this genius treat during a recent apocalyptic scroll session, I felt immediately called to make them.

 
 

I had everything in my house that I needed already because it’s truly barely anything.

 
 

I threw the following in a cuis and blitzed until very smooth:

  • 1 tub low-fat cottage cheese 

  • 1 tbsp honey

  • 1 tbsp rasp jam

  • 6-8 strawberries 

  • Eyeballed some vanilla extract 

Then I lined a 9x11 pan with parchment and added halves of graham crackers, which was especially thrilling because they fit perfectly. 

 
 

Then I dumped the “ice cream” all over and smoothed it out fully to the edges. 

 
 

Oops, and then I spread some butter and salt onto one of the graham crackers that cracked which was of course a negligible crack and merely an excuse to eat something slathered in butter. 

 
 

And then I got back on track and covered the whole pan with the second layer of graham crackers and threw it in the freezer for about 2 hours. That’s as long as I could wait anyway. And finally, the big moment.

 
 

Isn’t it lovely? And it turns out? Also very, very delicious. I cut them into individual sandwiches and plopped them into little individual baggies so that they felt portioned out, otherwise I would eat the whole pan. Which of course I did, but across many days. 

 
 

Each individual sandwich has 100 cals and 5 grams of protein—which is about a third or half of the cals and twice the protein of most store-bought stuff. It’s not a huge difference and I guess you could just go buy them but frankly, in my advancing and perimenopausal age,  I don’t love how sugar makes me feel, and I sort of refuse to consume fake sugar because let’s face it, what is it? So a 6-minute process for 20 healthy, evening treats that the whole fam loves is worth it to me.
